It is a gloomy May Day in Minnesota today, but Spring is here, the birds are back, the buds are popping and I am ready to make some changes – at home, in the sewing room and on this blog!
We started planning our meals and cooking at home more in April. We will continue in May and start adding more exercise.
My easiest change has been to start my morning with a warm lemon/ginger water before coffee. I steep the juice of one lemon with a few slices of fresh ginger for a few minutes. It tastes great and I am now down to one cup of coffee in the morning!
Yesterday we planned our menu for the week. All our recipes came from our Sunday paper this week (St. Paul Pioneer Press) – except the Mongolian Beef (I have included the link, and its delicious).
Sunday – Ham with sweet potatoes
Monday – Hot ham and cheese sandwiches with soup
Tuesday – Tortilla Casserole
Thursday – Leftovers
