Menu Monday

We grilled a couple times over the long weekend, so there is a lot of cooked meat in the frig for the week. So my focus this week will be on healthy side dishes we can all take to work!

One of our favorites is this broccoli, cauliflower salad. It goes with everything and with the added bacon makes a balanced meal all by itself.

Broccoli Cauliflower Salad

1 head broccoli, chopped

1 head cauliflower, chopped

chopped almonds

chopped, dried cranberries

4 slices of chopped, cooked bacon

1 Tbsp. to 1/2 cup mayo (I use just enough to make it cream – about 2 heaping tablespoons)

salt and pepper
