Healthy Eating – weekly food prep

No big meals planned for this week but I got a lot of food prepped and ready to pull together for some easy, healthy meals and snack ideas. Veggies are cleaned and chopped – all set to top a salad or toss in a fry pan for a quick side dish.

I made hard boiled eggs (1 cup water, 7 minutes)  in my Instant Pot 

I salted and roasted mixed nuts @350 for 6-10 minutes. Then packaged them in 1/4 cup servings. These make a great mid day snack with a piece of dark chocolate.

I also cooked 4 frozen chicken breasts in the Instant Pot. Perfect for chicken tacos, a chicken hot dish or chicken salad.  After I let the chicken cool a bit I got out my hand mixer and a large, deep mixing bowl and shredded the chicken to perfection. It works! Let me know if you try it.
