Meal Prep in the Instant Pot

I love Mondays. I am always ready to hit the ground running. Making lists for the entire week and then breaking that list down to a daily routine makes for a productive week.
Shopping and meal prep on Sunday also gets my week off to a great start. This week I did all my food prep in the Instant Pot. Less time + less mess = success!
1 cup wild rice and 1 cup water – makes 2 cups cooked wild rice. I will use one cup in soup and 1 cup in these amazing meatballs
I put 5 eggs in 1 cup of water for 6 min. to have hard boiled eggs on hand for lunch or snacks this week.
I also made a batch of oatmeal for breakfast or lunch for the week. Just reheat and top with berries.
No worry about anything boiling over on the stove so I was able to cook a pound of bacon (in the oven) and chop veggies for the week as well!

I love my Instant Pot! My favorite so far has probably been minestrone soup and a bean soup. Both are so easy and quick. I love that the beans don’t have to be soaked or anything beforehand.
Soups are awsome in the IP – no simmer time!
