Grilling season is in full swing at our house – making dinner planning much easier.

So this week, I am focused on breakfast and lunch planning. Here are a couple of my favorite breakfasts that work great for lunch or a midday snack at work too.

Smoothies have been my go to breakfast for a few years. Quick, easy, and a serving of spinach all in one glass.

In a blender combine 1-2 cups spinach, 1/2 cup frozen berries, 1 scoop protein powder, and 8 oz. almond milk. Blend until smooth.

Overnight Oats:

1 cup steel cut oats plus 3 cups water

bring to a boil. Turn off the heat and let cool. Refrigerate overnight – stir well in the morning – top with berries and nuts – perfect for breakfast or lunch.
