Weekly Food Prep

Back on track this week after a quick trip to Florida and lots of eating out (and beer). We also walked on the beach everyday – a habit I hope to continue now with the warmer temps in MN. I know I can’t exercise away a poor diet. I am up to 6-8 veggie servings a day and a minimum amount of processed foods.

While I cooked wild rice in my Instant Pot and bacon in the oven, I got all my fruits and veggies cleaned, cut and ready for the week. I am looking for alternatives to plastic storage in the kitchen — stay tuned!

I used the wild rice to make these meatballs which are perfect with a veggie side or zoodles and pasta sauce.

    Everything looks so good! I don’t do much food prep but have been eating better for the last 7ish months. I’m down 65 lbs and boy does it feel good to take better care of me!
